I do love vinegar base and I make it and cook with it but I also do Texas style brisket and ribs without vinegar base. I learned about Texas BBQ back in my trucking days. I can and do cook both styles. The two things I cannot stand on BBQ are the mustard base they use in the SC midlands and the tomato catsup sweet base they use in the Piedmont region of NC.
