I looked up torching copper and it looked really cool, they said the colors appear very quickly so you have to be careful not to over do the color you are looking for. He was showing on a sheet of copper so he could show many different colors. Those markers with the torch look sweet. I use a 1 pound hammer and stamp on a stainless steel block. Usually take a tap to find it, then one hard whack. (Copper is soft) Then torch it - if you don't like it, buff it off and try again. Paint fill - clean up with mineral spirits, and you're done. I like the look of slightly off or angled letters, it's not a production piece and makes it look hand made. I clean up the edges on a grinder, very light touch though because copper is soft. Then I just use my normal claw hammer and hit it a couple times. I've been using the flat spot on the back of my vise as my stamping surface. I also like the brushed look as opposed to shiny so I scuff mine up with a green scotch brite pad before stamping.
