She worked hard at it and became really good.After we retired (9 years) cooking ceased and we ate out all the time. Now here comes C19 and everything changed. She started cooking again and has regained her prowess. My parents always had a more liquidy tomato style and was good but the thicker beef based is so much better. It's pretty easy I taught myself how to do this and I season it as I go. I put brown sugar in it because it always reminded my mom of my grandmother's recipe and now I like it too much to change. I sweat onions in extra virgin olive oil with crush red pepper flakes, add tomato paste and garlic once translucent, then I add diced(preferably whole tomatoes) cook them down until smooth then I add a little tomato puree because it takes a long time for that step and it's convenient to increase my amount. This time I browned Italian sausage and put it in the sauce knowing I was putting it over cheese tortellini. I let it go for only 5 hours today normally it's a 8 to 10 hour simmer for me.
