Chicken wings. Sous vide with soy sauce, Shaoxing wine, sugar and garlic. Refrigerate overnight to dry out the skin. 2.5 minutes fry. Best wings ever.

With cooler weather in the area, I thought it was a good time to make a pot of chili. It made for a great supper tonight and will be used on hotdogs tomorrow. 20201010_183946-01.jpeg.991eb7afda0202cc9d74abaaf29f903e.jpeg

Yea I made chicken noodle soup from scratch including the stock. Put too many noodles in though and had to add some chicken stock.

Gotta start taking some pics. SWMBO was a horrible cook when we got married, I mean terrible.
She worked hard at it and became really good.
After we retired (9 years) cooking ceased and we ate out all the time. Now here comes C19 and everything changed. She started cooking again and has regained her prowess. Not happy about it but “is what it is”.

Beef stew with the cool weather. We have been trying to figure out old family recipes because the wife and I both enjoy less tomato and thicker stew....I think we finally figured out the winner. Her grandmother didn’t write it down before she passed so we have been trial and error the past 3 years.

You have me wishing I would have learned the recipe to my grandmother's vegetable soup. Haven't thought much about it until the cooler weather lately and would just love to be able to have a bowl and some cornbread to go with it.

The beef stew looks amazing and I'm glad to hear you have it figured out after all the trial and error. Enjoy!

My parents always had a more liquidy tomato style and was good but the thicker beef based is so much better. We tried so many things.....all the normal stuff like flour mixed with the seared juices of the beef....well this time mashed potato added at the end thickens it right up.....just a little....it’s amazing

My mom has been making Guinness stew... instead of potatoes cut up inside she served it over mashed potatoes. Its damn good.

I love pot roast, make it Italian style, with some diced tomatos, red wine, garlic, and a couple anchovies.

I agree with you mom, Guinness beef stew is best over smashed potatos.

That looks good! The wife and I were talking about making some from scratch last week because the stuff from the store seems to be getting thinner and thinner. That looks nice and hearty.

Negative sorry I do however cook large portions even though I'm single lol. I cook it for the firehouse and the guys absolutely love the hell out of it.

It's pretty easy I taught myself how to do this and I season it as I go. I put brown sugar in it because it always reminded my mom of my grandmother's recipe and now I like it too much to change. I sweat onions in extra virgin olive oil with crush red pepper flakes, add tomato paste and garlic once translucent,  then I add diced(preferably whole tomatoes) cook them down until smooth then I add a little tomato puree because it takes a long time for that step and it's convenient to increase my amount. This time I browned Italian sausage and put it in the sauce knowing I was putting it over cheese tortellini. I let it go for only 5 hours today normally it's a 8 to 10 hour simmer for me. I'm not Italian but I do like cooking Italian food.
