Father's Day dinner was by myself last night. Chanin and Connor are in Ocean City, so I could cook what I wanted and I wanted homemade fresh Aussie beef sausages with onions and gravy, braised cabbage, peas with dill and mashed spuds.

Made hamburger bbq, for all those not in my area sloppy Joe’s. Made it for the guys at work and am doing curly fries in the oven when I get in. Always a good meal, going to have to start grilling and doing lighter things with the temps getting warmer. Doing a brisket next week for the guys so it’ll be a long cook for dinner next week.

While it does look something similar, it's actually marinade for pork jerky. I used to make loads of pork jerky on the smoker but just kind of stopped. Figured I'd try a batch with the Pit Boss since it has so much room that I didn't have before and it just does all of the cooking work for me. Pork loin was always my go to because it's already very lean, it absorbs a lot of flavor from the marinade, cook time is less than beef, and the end product is so tender and tasty.

Another Trip Tip and sausage night. This time making sweet potato fries for the side. 

Smoked these spicy links in the Pit Boss, then sliced and finished them with one of my favorite sauces.

NY strip tonight. My favorite cut. Did my usual Montreal seasoning but I added a Worcestershire/honey/garlic marinade just to see as I don’t usually marinade steak, we’ll it was delicious, my only problem is now I don’t have left overs for lunch tomorrow 🤦‍♂️

My basil plants are growing like weeds this year so I had to find a means to pick a bunch and put it to work...cold pasta salad with basil pesto...not too bad, especially when it's super hot outside.

NY Strip has always been one of my favorite cuts (still right up there) until I discovered the Coulotte. In Brazilian churrasco (BBQ) it's known as the Picanha where they leave the buttery fat cap on it. They sell it at Costco labeled as "Sirloin Cap" but unfortunately they remove the cap. Still the best cut IMO! Extremely clean cut with absolutely no gristle. Pretty lean but extremely tender and flavorful! 

In fact, I think I might pick me up some this week.

I’m grilling T Bone steaks tomorrow (between rain storms) and hope to remember to take pics!  I always forget to take a decent pic until we’re 1/2 way consumed the steak!  
The Filets last weekend were really good!

Have you tried the Smoky Montreal Steak seasoning? Adds a really nice flavor to the meat. Have used it on chicken and pork as well, but you need to use a lot less than on beef or it overpowers the meat.
