Greetings, I’ve bee away for a bit. I cooked a batch of white chicken chili for the first time. It exceeded expectations. Next time I’ll halve the cumin as it came on a bit strong for my wife’s taste. And finishing it with a dollop of sour cream was spot on.

Chilly morning so I made some Keto coconut pancakes with butter and monk fruit syrup. Not sure why I am counting carbs right now with Turkey Day and Christmas cookie season looming on the horizon.

Man looks good--- I have yet to see a Professional Firefighter that could not cook--- and us volunteers did not to do bad either--- One of the things I missed about the fire service even though I was a volunteer Fire House Food. The last station I was at was an old school house no joke and had a full commercial kitchen and boy did we cook some good food there for special events and training night suppers

Got up early and baked the missus some pumpkin scones with not 1, but 2 icings (regular & pumpkin spice). We've got a full day of cooking that probably won't end till about 9:00 PM tonight. #ugh #Yay

Epic dessert last night, which took 3 days to make, but soooooo worth it! Turkish coffee custard in a Ghirardelli dark chocolate shell topped with whip cream and chocolate covered espresso beans.

Did a nice reverse sear New York strip for dinner with air fryer sprouts. I freaking love doing reverse sear always a perfect medium rare all the way through

While I forgot to take some pictures I’ve been using my pellet grill on the weekends. Last night made some fantastic pulled pork sliders with homemade coke slaw and sweet potatoes

Funny, so did I. Smoked at 250° for about 1 hour to 145°...fantastic. Mashed spuds and leftover green bean casserole for sides.

Dinner last night gorgonzola, prosciutto and balsamic fig Pizza topped with balsamic arugula. It was a weird combo that was absolutely delish, sweet, salty, tart & savory in every bite. Also, Publix fesh pizza dough is quite good if you don't have time to make your own.

Did a nice sweet and spicy marinade on some boneless thighs tonight. Will swap out the hot sauce for siracha next time but it was damn good. Paired with brussel sprouts and grilled gold potatoes

That looks tasty! I bet that would be good with the sriracha.
