I love steel cut oats, which are much more substantial than regular oats. Rather than add sugar or fruit, try adding a low carb flavored protein powder. This ups the nutritional value and punches up the flavor without adding extra sugar/calories. Unfortunately, oatmeal is not allowed on the keto plan.

First time I saw grits was Boot Camp, wasn’t sure what there were for.  Still can’t stand them.

I was never a fan of grits, but. I had a dish at the House of Blues in Vegas that was deep fried grit cakes and shrimp and it was great. I've since made shrimp and grits myself (not quick grits either) and actually like them. I still won't have them for brekkie though.

I had never had them before.  I tried them at a little breakfast place when my wife and I were in Charleston SC, and I really liked them, not sure why they are plain looking as all get out, but I found them tasty

I can make some pretty good guesses on how to make it but...I look at it as rodeo riding, I probably could but I might get hurt.

I used this video as a starting point and then just augmented it. For the beef I sautéed onions and then browned the ground beef and added fire roasted tomatoes and taco seasoning. For the chicken I sautéed onions, green & red peppers then added cooked chicken and taco seasoning. I used jack & cheddar cheeses. 

Some learnings;

I would shred the chicken finer than I did in the image.

I would used fried tostadas instead of taco shells as they will add more crunch

When you bake it place a cookie sheet on top of the wrap and weigh it down somehow so the cheese melts into the wrap and meat to hold it all together. 

With 10 minutes left in the bake, remove the cookie sheet and let the top brown, you can turn the oven up to speed this process.

Dinner last night was turkey cutlet stuffed with manchego cheese & fresh sage leaves topped with a pomegranate wine reduction & fried sage leaves. Probably in the top 10 things I've ever made/eaten!

Long story short…wanted to make beef on weck sandwiches tonight at the firehouse.  We took calls at 545 and 615 so we had to continue to restart the process.  Made it work, the potatoes weren’t fantastic but the sandwich tasted alright.

Jackson got a cooking set from my BIL for Christmas and has started making some meals with us. 
 

first up was a tomato basil soup and grilled cheese. I don’t think I’ll ever eat tomato soup from a can again!

Given the fresh snow and temps dipping into the teens I tried my hand at making fresh pasta and putting together a dish of cacio e pepe. It turned out quite good. I used flour from Italy sourced from the local Italian market.

When I think of Syracuse and Italian, my brain goes to pastabilites.  Their hot tomato oil was so popular that Wegmans "created" their own version...

 

Hope the meal was good, definitely was the right choice for this weather.

I’ve discovered Wegman’s “creates” a lot of things and I’ve been pleasantly surprised by a number of them. Their take on kimchi is quite good. It’s my go to when my wife makes pork chops and sauerkraut. I forgo the sauerkraut and enjoy my pork chop with the kimchi.

Dude...couldn't agree more.  We have fun at home when opening a new jar...my 4yo loves to say woah daddy, the jar is gassy!

Nothing wild just bacon and potato pancakes.

when my wife does mashed potato’s during the week I like to do a breakfast with them and fry some super crispy on the outside with a little of the bacon grease. It’s delicious
