Here’s another a stellar recipe for Creamy Tuscan Chicken - unlike dozens of other ordinary Tuscan Chicken recipes - this one is outstanding! You can freeze leftovers, but the original preparation is best with a good pasta!

Last night cooking for mom. Smoked gouda stuffed meatloaf wrapped in bacon, with a side of stir fried green beans & toasted almonds. She loved it, but said we're probably going to HeII for eating all this meat on Good Friday! Hosted my parents-in-law for Easter Sunday. They normally host all of their children's families, but most weren't going to be there this year. So we decided to host. I cooked some braised beef ribs as it's not the sort of food they would cook or eat at a restaurant. Overall it was delicious and the meat fell off the bones as I pulled them out at the end.

Did a dumpling soup the other night. Dill was the major flavor and put pieces of meatball in the dumplings. Came out pretty good (will do smaller dumplings next go around)

Couple months ago SWMBO bought a Crock Pot.  I didn’t have any idea how this was going to go except it going to Goodwill after a few months.  
I was wrong it’s been pretty good.  We did some Ribs recently.  I browned them 1st on the grill then she put them in the CP with some kind of seasoning.  We took them out put them on the grill for a couple minutes with some BBQ sauce and they were freaking great.  
she can amaze me occasionally 😁

About 10 years ago we got a multi-cooker.  It's a slow cooker, pressure cooker and rice cooker.  Easy to brown meat, then add all the veggies and liquid and cook all day.  Still works great and is the best, easiest way to pressure cook rice.  I've replaced the seal on it once and replace the non-stick pot with stainless steel.

I love them for stews especially on a work day set it and forget it, come home to dinner it’s awesome in the winter

She did a Pot Roast recently and it was very good.  We have more Ribs planned for near future.

Grilled some lamb chops they turned out okay. I didn’t do a good enough job of rendering out the fat cap it wasn’t cooked well enough to be able to eat. The lamb tasted good though just some salt and pepper but it was good better than the last few times I made lamb

Did a tri trip for dinner tonight. Maybe I’ll do something on the smoker for the mid Atlantic gathering so we can eat as a group Saturday at the house. I’ve cooked for 20 plus before so that’s not an issue. Just have to decide if it’s smart or not

I did chicken on the kettle using a vortex on Saturday night. Using Naturiffic chicken salt it gets the skin really crispy. Served it with Carolina style slaw and Australian potato salad.
