tommc23 Posted July 5, 2022 Author Share Posted July 5, 2022 Fired up the grill and put some wood chunks on top of the charcoal to smoke some dinner. Put the chicken on first and right over the fire to get some smoke on them before I finished them in the air fryer! They turned out very very nice. The pork loin was smoked until it hit 140* internal then I pulled it. Tomorrow that sucker will be sliced up into 3/4 inch pork chops and grilled at work with a side of corn and rice as the meal for work tomorrow night. Haven’t smoked a whole loin like this to turn into chops so we will see how it turns out. Put a quick rub on that and the chicken which turned out nice so I look forward to trying this tomorrow. yungkory Posted July 5, 2022 Share Posted July 5, 2022 Woke up at the ass crack of dawn to start the smoker. The usual guava and cherry, and threw a prime brisket on it. Hovered between 250-275 for about 6 hours and once I was happy with the bark, wrapped it and finished it at 300-325. Pulled when it was probing buttery smooth and let it rest in a cooler wrapped in a towel for 2 hours. Sliced it in front of @mr.hicksta and we laughed as the juice poured out of this thing. Should've took a video. Not quite as "foldy" as the competition dudes I see, but pretty frickin good. Made mac and cheese as well. Grilled them to 145* then finished them in a sauce to glaze them to 170*. They were good but not fall apart like I would like them to be. They were absolutely delicious though. Did that with a little rice and poured the sauce over it and I was very happy with it. This and Picanha are the 2 red meat staples in the Marler crew. My local WinCo sells both and they are always $6 or less/lb which is a steal! And the quality is terrific. (The ribeye came from Costco and it seemed to grow bigger during cooking. ) Riley is eyeing my meal. Grilled them to medium rare with decent char. They were really good, one if the better pieces of steak I’ve had in a while. Even SWMBO liked it!!!!! of course there’s no pics, keep forgetting.
