Yesterday SWMBO broke out 2 Filet Mignon’s ((6-7oz).  Grilled them up to med rare with peppers & onions. 
As usual didn’t remember to take pics, we were trying to beat the thunderstorm!!

Fired up the grill and put some wood chunks on top of the charcoal to smoke some dinner. Put the chicken on first and right over the fire to get some smoke on them before I finished them in the air fryer! They turned out very very nice. The pork loin was smoked until it hit 140* internal then I pulled it. Tomorrow that sucker will be sliced up into 3/4 inch pork chops and grilled at work with a side of corn and rice as the meal for work tomorrow night. Haven’t smoked a whole loin like this to turn into chops so we will see how it turns out. Put a quick rub on that and the chicken which turned out nice so I look forward to trying this tomorrow. Look for updates here about the chops and how my coworkers like them.

Woke up at the ass crack of dawn to start the smoker. The usual guava and cherry, and threw a prime brisket on it. Hovered between 250-275 for about 6 hours and once I was happy with the bark, wrapped it and finished it at 300-325. Pulled when it was probing buttery smooth and let it rest in a cooler wrapped in a towel for 2 hours.

Sliced it in front of @mr.hicksta and we laughed as the juice poured out of this thing. Should've took a video. Not quite as "foldy" as the competition dudes I see, but pretty frickin good. Made mac and cheese as well. Good times!

Appy: Jalapeno deviled eggs with flying fish eggs and smoked paprika 

Main: Slow cooked (8-hours) pork shoulder in A&W Root Beer, pulled and served with a vinegar slaw. 

Dessert: Raspberry, cream pie with a chocolate ganache. Delish, but not pretty to look at.

Oh it's Picanha time? 

This time I decided to do 2" steaks. Dry brined for 6 hrs and topped off with Kinder's woodfire garlic and cracked pepper. Slow smoked and reverse seared in direct fire on the smoker sear box.

Pulled pork for the neighbours yesterday. Went in at 7am, came out at 5pm, no wrap and averaged 275° for the cook.

Had the smoker fired up to do some spatchcocked chickens, but decided to prefunk with some smoked queso first.

Did something different tonight. The local store had boneless beef short ribs so I had to grab them. Grilled them to 145* then finished them in a sauce to glaze them to 170*. They were good but not fall apart like I would like them to be. They were absolutely delicious though. Did that with a little rice and poured the sauce over it and I was very happy with it. Definitely going to make a burrito with the left overs

I've got to say that I got pretty lucky with my wife. She got zero cooking skills from her mom, whose signature dish while we were dating was chicken chunks and Mac and cheese. My wife can flat or cook and being a southern boy whose mom could cook up a storm, I'm kind of spoiled to good food.

Trimmed, salted, and ready for the 12 hr dry brine. Will be seasoned with a smoked coffee rub prior to going in the Pit Boss. 

Tri-tip! 

This and Picanha are the 2 red meat staples in the Marler crew. My local WinCo sells both and they are always $6 or less/lb which is a steal! And the quality is terrific.

Family came over to grill at our new house today (even with boxes everywhere!)

grilled up some filets for everyone. Yes @Lacassem, I grilled them.

Thank you! the consensus was they were great. Little to evidence left. Haha

letting them come up to room temp before grilling really does make a pretty big difference. And man do I love tenderloin.

My wife is off on a girls trip so it’s me and the dog for the next 10 days. Golf will be played and meat will be cooked over fire.

Tonights menu, a drunken ribeye cooked medium rare, grilled yellow squash and smashed potatoes using baby Yukon golds. All washed down with an Enso Double IPA from Equilibrium Brewing. (The ribeye came from Costco and it seemed to grow bigger during cooking. 😂) Riley is eyeing my meal.

SWMBO picked up 2NY Strip steaks @ Walmart Saturday.  I’m not really crazy about Walmart steaks but what the heck.  Grilled them to medium rare with decent char. They were really good, one if the better pieces of steak I’ve had in a while.  Even SWMBO liked it!!!!!

of course there’s no pics, keep forgetting.
