I’ve been lazy eating one meal a day I need to stop being lazy and cook something. Picked up a steak for tomorrow night going to grill that sucker up and I made some homemade creamed corn so I’ll eat that on a baked potato with my steak tomorrow.

Ok...truth be told, I cannot stand pesto.  It's just not something I seek out and whenever I hear someone is cooking a pesto dish I cringe a little...

Here's the thing...I have enough basil in my backyard garden to feed the Italian armed forces.  So tonight...it's pesto pasta...

I was light on the oil and parmesan and found a nice texture that didn't overwhelm my palette.

I could eat spaghetti and a sweet red sauce every day if it didn't mean putting on LBS.

Pine...some EVOO, Fresh chopped garlic, fresh grated parmesan and some basil from my garden.  Little bit of salt and some pasta water and that's it.

Picture doesn't do it justice, but the garden provided a good chunk of tonight dinner.

Cast iron cheeseburgers and sauteed yellow squash. Cheeseburgers were topped with huitlacoche ("corn smut") sauteed with garlic and an excellent corn salsa. Everything but the meat and cheese came from the garden this week.

Huitlacoche is the result of a fungus that infects the corn kernels. The kernels swell up huge and turn gray/black. Mushroom consistency when sauteed and very earthy in flavor. It was excellent paired with the brighter acidity of the corn salsa.

After spending 1 month in Costa Rica and having my mom cooking a feast on a daily basis + alcohol... my blood pressure is kind of high now, so back to eating healthy 😄

No breakfast for me, have a banana, oatmeal, berries smoothie for lunch and try to eat a small portion of dinner.

This thread is killing me...

You bet! It was a different menu every single day for 4 straight weeks...
Here a couple of snapshots (might be too exotic for some 😄)
Top one is Asian style: Taiwan sausage with garlic, soy braised tofu with fish, soy braised pork, spring onion chicken, veggies, those things in leaves are sticky rice meat dumplings (kind of like a tamal) and forgot what kind of soup that was.

Cast iron cheeseburgers and sauteed yellow squash. Cheeseburgers were topped with huitlacoche ("corn smut") sauteed with garlic and an excellent corn salsa. Everything but the meat and cheese came from the garden this week.

Huitlacoche is the result of a fungus that infects the corn kernels. The kernels swell up huge and turn gray/black. Mushroom consistency when sauteed and very earthy in flavor. It was excellent paired with the brighter acidity of the corn salsa.

I genuinely can't believe they missed out on naming it "corn porn", because...it rhymes.  Rhyming makes everything funner. Yeah, "funner." Fight me.
