Did something different this evening.  I did a NY strip dry-rub with essentially a Montreal style mashup yesterday and let it sit in the fridge overnight.  I wish I had thought of this earlier but the idea hit me to melt 3-4 tbsp of butter and then let the steak sit in that prior to sear. So I did that and then cooked it on the cast iron.

Holy wow.  

Pairs nicely with a chopped salad.

1lb TBone on the grill medium rare, SWMBO was having Crab Legs.  Just starting to rain so had to get out of there.  Beat the lightning.

Kind of along the lines of cooking… I used to cook almost every meal at the house.  But have relinquished my command of the kitchen at some point over our marriage.

Wife says today, can we trade in these knock of blades for some real stuff?

I immediately thought, blades? Heck yeah, let’s trade in my old set of DCi’s for a 4-PW… but she was talking knives.

So, I said, yes… new blades, but they have to be forged from Japanese Steel with wooden handles, and a block…

Have a good look at Wusthoff. I have one of their knives (I'm going to upgrade the rest of the knives to Wusthoff) and it's got to be nearly 20 years old. Holds an edge and gets sharp like nobodies business.

I finally caved and purchased this baby. I’ll be putting hibachi chefs out of business in no time…

So I’ve been a bit of a chili head for a long time now, but I’ve always been the type that I won’t eat something just for the sake of it being hot. The flavor has so be on par with the heat for me otherwise I don’t see a point. So around 10 years ago all I could really find around here for hot peppers were common orange habaneros, which frankly I absolutely hate the flavor of. So I started to seek out alternatives and started to stumble across the world of “super hot” peppers, most of which I found had much better flavor than the orange habs when used properly. Been growing for myself every since, usually 4-6 different varieties each year. 

One of this years unexpected crosses I’ve decided to name Aloha Mama.

Tuesday night dinner at the Hall..Some simple chili marinaded chicken breasts with Spanish rice and beans and some elote...holy moly was the corn good...
