I bought the skinless pork belly strips from Costco if you're familiar with it. Cubed them as evenly as I could -- difficult task when the slices aren't cut the same width but I managed. Yellow mustard as a binder. Kinder cherry chipotle rub. Whenever you think you have enough rub, you put some more. Tossed them around to make sure they were evenly coated on all sides, then let it rest for a little bit. Once the rub looked like it was a little wet, threw them on the smoker at about 250-275 for a couple of hours. Used good old Kingsford charcoal and some guava wood. Once they get the color, I pull them from the bbq, throw them in that foil pan, cut a half a stick of unsalted butter, and add that with some brown sugar and local honey. Covered it and let that go for another hour or so. By the time they're done, the probe basically goes in and out without any resistance at all. Final step was BBQ sauce. Sometimes I make my own, but this time I just used Kinder again -- their mild bbq sauce is pretty good and no one seems to ever not like it. I tend to make my sauce sweeter because I like that contrast against the smoke, but it might not be everyones' preference and I was trying to appeal to the neighborhood. Coat with sauce and cook uncovered for about 15 minutes or until the sauce kinda sets. Add more sauce after that and serve! I like cooking on Sundays and making enough food to last for the next couple of nights. Recently got a toaster oven/air fryer thing so I've been playing with that the past few days. Used it to roast some broccoli and it came out great in just 10 minutes, going to be a big game changer for cooking quick stuff! Now that the boy is running around and almost 2 years old, he's quite the handful and with our small little house it's hard to manage him while spending a huge amount of time cooking. Next time I'll probably use a pressure cooker to do the majority of the work. It's just not really a weeknight recipe to make after work. GolfSpy_KFT Posted July 26, 2023 Share Posted July 26, 2023 Had my first attempt at a cheesecake in our Instant Pot last night to surprise my wife for her birthday. Chilled overnight and all day in the fridge today and while it’s not the best cheesecake you’ve ever eaten, certainly not the prettiest, but it is pretty darn good. I will definitely be making more and trying different recipes. This one is a Vanilla Bean Cheesecake with Graham cracker crust. Topped it with some strawberries and strawberry syrup and it was tasty. One thing I learned is that if you over mix it, even a little, it gets bubbles in the batter. Next time I will mix it just enough to incorporate everything. Another is that you have to crush the heck outta the grahams. You can see in the picture it’s a bit chunky on the side there, and the smoother it was crushed the better it formed in the pan.
