Did a bison steak for dinner left it on the rarer side because I’ve heard it is best rare. It was very delicious with a side of local asparagus which was cooked in my air fryer

Thawed some goose out and made pastrami today. Fired up my charcoal grill with some lump and wood chips to make it into a smoker. One is a before and one is an after

Did a tri trip for dinner tonight. Maybe I’ll do something on the smoker for the mid Atlantic gathering so we can eat as a group Saturday at the house. I’ve cooked for 20 plus before so that’s not an issue. Just have to decide if it’s smart or not

I did chicken on the kettle using a vortex on Saturday night. Using Naturiffic chicken salt it gets the skin really crispy. Served it with Carolina style slaw and Australian potato salad.

Made homemade fries today to go with my smash burgers! Put old bay on the fries and they turned out nicely in the air fryer.

Smoked a pork butt on Sunday for the holiday... And I guess for the rest of the week. Tacos and Sammies at lunch and dinner for the foreseeable future haha. Was too tired from cooking/yardwork/baby to go to the market for buns so we ate them with bread. Homemade slaw and homemade bbq sauce for dressings.

Decided to try something new that I never cooked before. American wagyu flank steak. Cooked it to a perfect rare but I wasn’t super impressed with it the super fattiness of it a little too much for me it was a good experience but if I ever do it again I’ll have it cooked for me.

Not sure if I mentioned this but my old griddle bit the dust a few weeks ago. It was a converted stainless steel Kenmore grill that a friend of mine (RIP Dave) made the griddle top for.

I bought a new one yesterday. I did a bit of research and found that the Char Grill Flat Iron was a better deal than the Blackstone of the same size and it was quite a bit cheaper too.

I seasoned it up and made skirt steak tacos with cilantro lime rice.
