I bought a full size piece of picanha and below is a picture after I cooked it. They normally sell the picanha in 5 oz slices, but I asked them for a whole piece which is around 3 pounds. I also bought some bottom sirloin and filet as well.

I use the reverse sear method, which can be done in an oven or outdoors in a grill/smoker. You start with a low temp, the lowest my oven would go reliably was about 225. You could it until about 10 to 15 degrees below your desired internal temp (internal temp for med-rare is 130, so pull out by around 115). Take it out and put foil over and let rest for 20 min. After that, remove foil and either broil for a few min in the oven to get a nice sear or use a pan or grill to get the sear.

My meat cooking game is much stronger than my golf game 🙂

I know there's another thread for meat/grilling but why not here since we're all sharing stories from around our own campfires?

you ever try a Sous Vide? It's the only way I'll cook individual steaks any more. It also works well for tri-tip, Ribeye, Picanha, and other steak style roasts. You can set your desired temp and the meat will never go above the temp and then you can reverse sear or flash sear to finish. It's great because you can just leave them in for a few hours if needed and they'll never overcook. I'll have the Mrs throw them in a few hours before I come home from work and they're ready to sear up as soon as I get home. Also because they're cooking in a sealed bag, there's no air to dehydrate the meat and cook out the juices.

Wife in healthcare is stressed out to the max.  Will no longer let us take our 3 kids to sitter, ages 5, 3, and 1.  Also is now working from home.  Get me out of here!

I'm volunteering to go outside for 3 mile runs so that i can get out of the chaos.

Hope everyone is doing well.  Some nice weather here for today and tomorrow so I'm gonna try to get out for 9 holes tomorrow.  Not holding my breath.

I've done sous vide but i prefer the low temp oven first and then finish on the grill/pan/broiler. My issue with sous vide is that the cooked meat has a slightly different texture even after searing. Many people wouldn't notice that difference in texture, i am kind of a meat snob 🙂

I've realized several things during all this.

1.  I have a wife

2.  I have kids

3.  We used to eat out way too much

4.  My wife can't cook

My company makes some respiratory products and we can't make them fast enough unfortunately.  It is really hard speaking to people on the front lines of this that need help and we can't deliver because of demand.

I would recommend trying the reverse sear method (low oven temp followed by finishing in the cast iron pan). See how you like it compared to the sous vide.

Day 3 of the ohio unemployment site not working. It takes 40 minutes to fill everything out, then, when you click the very last button... after you are told your claim has been accepted it it says the site can't be reached. Then you get to start all over again. I give up.

Can't get any answers from anyone. No information other than the site is "having problems"... no s***!  WTH are we supposed to do!?

I am sure you’ve seen this but I want to share as it may benefit others. The (near ready to be signed) stimulus package has $600/week for 24 weeks federal unemployment benefits in addition to what Ohio offers if they get it together.

I hope that helps you stay afloat and reduce some stress for you and your family.

Low/Slow is pretty much the only setting that my smoker has. I use a Smokehouse Big Chief. It's as basic as they come but gets it right every time. It maxes out at 165/170 and my grill gets up to around 1000. Whenever I smoke meat, it always gets a final kiss from the grill for a finishing touch of goodness.

Update:
It seems I'm signed up for unemployment. I got on at 3:30 am to try again. I punched in my PIN and got right on. It said I wasn't eligible for any new claims. I went to the current claims section and all my info was there from the last time I filled it out.  After being shut out at the last of signing in, I would have thought everything was gone. It says I get the max payout. I guess I'll see if a deposit shows up in the near future.

That’s great, you should be good to go system was jammed up. 3.5 million unemployment claims is overwhelming.

Yup...I haven't really been able to be grilled so it's been a bit tough.  I did make some shrimp spring rolls with some cilantro lime rice the other day which was pretty good.  Made some basic spaghetti and meatballs last night and lasagna the night before.  I need to get some meat on the grill soon...LOL
