All Time Favorites: Comfort Foods

That definitely looks delicious! Growing up, biscuits and gravy was my favorite breakfast food, well... it still is. We made breakfast for dinner tonight, it was so good. Bacon, sausage, French toast, biscuit and gravy.

My boys have breakfast for dinner. The other night I made French toast out of a loaf of bread my dad made. It was a little dense (he just started making bread) so I figured it would work well for that.

That seemed to like it! 60476571370__1982E237-F78A-421E-9E84-F640FA22BAAC.jpg

oh come on!  What are their breakfast tacos!? haha can we get one of them up here in MA?

Breakfast taco is a tortilla filled with scrambled egg, fried potatoes, bacon or sausage. cheese and onion topped with picante sauce. Roll it up and have at it. Tis a staple here in south Texas.

King St has a good gravy special sometimes. Their cornbeef hash is good too.

Nothing wrong w cornbeef & hash! I’m sure the Bacon Boyz can come up with some great comments.

Like it with a fried egg and slice of cheese on top.

That works!

My favorite brownies... 3 ingredients! Yep. Three.

2 cups graham Cracker crumbs
1 1/2-2 cans of Eagle Brand condensed milk
1/2 bag to a full bag of chocolate chips

Mix it all together. Put into a glass baking dish. Cook on 350* for 15-20 minutes, or until when doing the toothpick test, a toothpick comes out clean.

Best. Brownies. Ever.

You mean a photo like this?...

So here's the rub.. I made these very impulsively.. not paying any attention to the time. Took them out only to realize that I had to be out the door for my tee time here in 15 min. (Insert Homer Simpson.. DOOO!)0425201434.jpeg

My wife and I spend most winter weekends cooking big pots of stuff to stock our freezer for the remainder of the year, and I think most of these things count as comfort food.  This winter we stocked up on homemade chicken stock, bean soup, chicken pot pie filling, lamb vindaloo, New Jersey-style red sauce (with lots of meat), goulash, chicken and sausage gumbo, and New Mexico red chile sauce (for carne adovada).  My favorite is duck and mushroom gumbo, but I got a little lazy, that one is a two-day process.

The flavor is fantastic! just like a s'more but without the marshmallows. I'll be honest, I think I messed up the condensed milk to graham cracker ratio and they turned out very gooey and very rich. Even with the toothpick test coming out clean.

Not a bad thing at all though.

The mad kitchen scientist in me tried a 2nd batch with homemade condensed milk made with coconut sugar, added an egg, and 1/2 tsp baking powder, a bit of salt, and vanilla extract. Ok, so I completely destroyed the simple 3 ingredient concept here. But they turned out more like a cake brownie.

The next batch I make will have broiled marshmallows on top.

Hey, what the hell else am I to do during these times??

They’re called “Sinkers”, and they’re supposed to be rich. The original recipe calls for 1 can of condensed milk per 2 cups of graham cracker crumbs, but we add a little more so they’re more moist. Shouldn’t be gooey, and not meant to have the consistency of a brownie, or cookie. Should be nice and dense.

Last food post..

Another comfort staple is homemade smokey tomato basil bisque with in-side-out grilled 4 cheese & bacon.

Not really in-side-out but you cook on the skillet with shredded parmesan cheese on one side and shredded sharp cheddar on the other. Soooooo good.

I usually use a good sour dough but only had this whole grain to work with. Still very tasty. 0426201238.jpeg0426201239.jpeg
