Dinner last night was buffalo chicken stuffed peppers. They were very spicy and quite tasty. I used sugar-free buffalo sauce and cut it to 1/4 cup, cause I'm a wuss. I also used half the amount of onions to limit the carbs.

Diet update: I'm now 3 pounds from my goal weight, down 16 lbs total. Still struggling with that stubborn belly fat and a recent back strain has limited my ability to do ab work and high intensity workouts. I've been walking on the treadmill, riding the stationary bike and doing slow controlled weight lifting movements.

I found these zero carb egg & cauliflower wraps at ALDI yesterday and they are a game changer! I love wraps for weekend breakfasts & lunches as a change of pace, but flour tortillas are off limits. These wraps taste like eggs, pretty neutral, and while they are very thin and fragile held up well. Here I made a chicken wrap by placing some sliced chicken & cheddar cheese on the wrap and microwaved for 30 seconds and then added lettuce and some mayo.

Brussel Sprouts are a great low carb veggie that we eat at least once a week. Last night I made a creamy sliced sprout recipe that was very easy and a nice change of pace from the boiled or roasted variety. If you like creamed spinach you will enjoy this recipe as well.

Diet Update: I've been fluctuating between 2-3 lbs from my goal weight for the last week. My back is better, but still not ready for any high intensity workouts or ab work. It's amazing how easy it was to drop 15 lbs, yet the last 2-3 are stubborn as hell. Will keep on going, but we have some upcoming parties where wine will be tough to avoid.

Made some Keto fat bombs today. There are tons of fat bomb recipes online, but this is the standard base recipe. I double the recipe and instead of using Swerve I use 1/2 scoop of vanilla protein powder, which provides a more flavorful sweetness. I chop up the chocolate and roll the balls in it.

Dinner last night was keto fathead pizzas, with a diet/low sodium sauce, both recipes below. The nice thing is the pizzas will provide lunch through the weekend too!

Diet Pizza/Pasta Sauce:

8 oz can low sodium sauce

2 TBS Tomato Paste

1/2 cup water

2 tsp Splenda or other keto sweetener

1/4 tsp garlic

1/2 tsp dried basil

Bring to boil, then reduce heat to low and partially cover with a lid. Cook for 1 hour, remove and let cool then place in an airtight jar. You just want to use a small amount over the pizza or it can become soggy.

Dinner last night was coconut crusted mahi mahi with a side of bacon roasted Brussel sprouts. The recipe called for salmon, but our stores have been wiped out of beef, chicken & fish the last 2 weeks, so I substituted the mahi and it had a really delicate flavor.

A little keto dessert last night. Chia seed pudding is a bit like tapioca in that the seeds swell when immersed in liquid. This is the base recipe, but there are a number of ways to make it adding different flavors & toppings. I used coconut milk and sweetened it with Swerve.

I decided to stop taking the creatine last week because it draws water into your muscles and can cause additional weight gain. After one week, I've dropped an additional 2 lbs and as of today, I've reached my goal weight.

1/9/22 - 195 lbs

3/1/22 - 175 lbs

My back feels better and I did some ab exercises this morning and headed to the driving range this afternoon to burn a few more calories.

Made a charcuterie platter last night for dinner with my first glass of wine in 2 months. Anything on the platter that looks like it has carbs was for my wife. Dinner last night was keto BLTs. I made bread using the Chaffle recipe. Chaffles are cheese based waffles that are used as a burger bun or sandwich. I find the waffles too thick so I just laid the batter out on parchment paper and baked until it turned brown. I tripled the recipe and It worked great for the BLTs.

Diet update: I've dropped one more pound, so 21 pounds below my starting weight. Now trying to add back additional protein sources to aid my workouts & lean muscle growth. Additionally, I started back on creatine, not because I felt not taking it was holding me back in the gym, but due to another potential benefit.

When I got into my mid-50's I started to get excruciatingly painful abdominal charley horses. It mostly happened when trying to do any type of crunching exercise or even just moving weirdly. In a self deprecating revelation, I once got one during sex, not pretty. It always occurred in the upper most right abdominal muscle just below the rib cage. The muscle would get rock hard and you could see it punching through the skin! It would go away in 5 or 6 minutes, but would be painful for days afterward. I hadn't had one in about 18 months and last week I got three of them in 3 days! It occurred to me that I had been on creatine for about 18 months and perhaps its ability to draw water into the muscles was having a beneficial effect. Since any low carb diet can cause dehydration, perhaps the creatine is the ticket. Will monitor and report back.

Dinner last night was a porkucopia of flavor. Pork tenderloin with a BBQ pork rind crust & Brussel sprouts sautéed in bacon grease and topped with more bacon. I bought a bag of BBQ pork rinds and crushed them for the topping. I liked the larger crumbs as they gave some nice crunch to the pork.

Left over corned beef makes for an excellent Reuben for dinner. Used Aldi's keto bread for the sandwich with a side of baked rutabaga fries.

Dinner last night was seared tuna with cheesy cauliflower tots. The tots were excellent! I used cheddar & pecorino-romano for the cheeses, as I was out of the other stuff. I also coated a few of the tots with ground BBQ pork rinds and it added a nice crunch to them.

Diet Update: I've unintentionally dropped another pound so 23 down total. I've reduced the amount of cardio I've been doing and adding back more protein to build back lost muscle. Since starting back on the creatine I have not had another abdominal charley horse, so thankful for that! We have guests visiting in 2 weeks so I will be bit off the diet while they are here, but will get right back to it after they leave.

I combined two recipes for this keto blueberry tart dessert. I used the crust from a keto key lime cheesecake and I took a blueberry tart recipe and converted it to keto by using Swerve sweetener instead of sugar.

Stepped away from the diet for a week while my mom was in town. I gained 3.5 lbs which should be pretty simple to drop getting back on the diet. Some lean beef for dinner last night to get the ship righted. Keto does not have to be boring.

Dinner last night was Keto Gnocchi, you heard that right gnocchi! While it didn't taste anything like the real thing, and had a somewhat weird texture, covered in my diet sauce with plenty of parmesan & fresh basil made it pretty tasty.

Been fluctuating like crazy over the last couple months between 173-176 with some diet diversions. Muscle tone is good, but I've had to come to the reality that my days of having a 6, or even, 4 pack abs are a thing of the past. 😥 

Dinner last night was keto coconut crusted haddock and Brussel sprout, tomato & mozzarella bake.
