Tonight, we grilled chicken using it and paired it with some mashed potatoes and corn...it was delicious! Made it for the guys at work and am doing curly fries in the oven when I get in. Always a good meal, going to have to start grilling and doing lighter things with the temps getting warmer. I used to make loads of pork jerky on the smoker but just kind of stopped. Figured I'd try a batch with the Pit Boss since it has so much room that I didn't have before and it just does all of the cooking work for me. Smoked these spicy links in the Pit Boss, then sliced and finished them with one of my favorite sauces. Tri tip all smoked up resting before for the reverse sear. Reverse sear over the sear box on the Pit Boss Final product.. In Brazilian churrasco (BBQ) it's known as the Picanha where they leave the buttery fat cap on it. They sell it at Costco labeled as "Sirloin Cap" but unfortunately they remove the cap. Still the best cut IMO! Extremely clean cut with absolutely no gristle. Pretty lean but extremely tender and flavorful! In fact, I think I might pick me up some this week. Adds a really nice flavor to the meat. Have used it on chicken and pork as well, but you need to use a lot less than on beef or it overpowers the meat.
