fixyurdivot Posted June 18, 2019 Share Posted June 18, 2019 Love eggs. Scrambled eggs, with a dab of sour cream, 1/2 and 1/2, beaten to a froth and with swiss cheese melted in. Add some chopped potatoes, Tapatio sauce, and wrap in a microwave warmed flour tortilla . My good fishing partner showed me a trick for over-medium fried eggs - that makes them come out perfect every time. Just a little butter in the pan, eggs in and on medium heat until the whites just start showing, add a wee bit of water, turn down heat a bit and cover. The steam creates perfect, never burned bottoms, completely cooked whites, and hot runny yolks . Salt & pepper, generous amount of Tapatio, and soaked up with quality toast and butter. Your comment made me go downstairs to try it, cause I forgot this morning. I did the 1 minute trick and it came out great... I'm using a Samsung microwave at 800W power. There was still some transparent egg white, so I think 1:15 would be the optimal time for my microwave.
