Certainly was not "crispy" but still had decent flavor. Might be something worth coming back to later. Up since 0400. 20lbs total brisket, 115 ribs, 24 jumbo beef dogs, all sides were from scratch: 12 hour bbq beans, macaroni salad, coleslaw, sausage cream cheese jalapeños, roasted onion potatoes. 34 people, and almost no leftovers. I started with a 30" offset many years ago and have tried many different types and brands of smokers since. It all depends on what kind of dedication and time you want to invest in the cooking side of things. Each style has its pros and cons. I like it and I've "figured it out" but the only issue is that you can't add more fuel without taking everything off which is super annoying for long smokes. I'm kind of put off by pellets just because I don't know what's in them. I buy my charcoal and wood chunks from a local producer. If you're determined to use charcoal and chunks, check Home Depot or Lowes for an Oklahoma Joe offset. Only thing I had to watch was the mushrooms for about 30 minutes to make the sauce. Everything else just kind of did its thing while I was busy. I've been pellet grilling for a number of years now, and can say that they are 100% safe. Different brands all use the same 3 manufacturing plants. I like the sams club brand, never tried Costco brand. Rural kings are cheap, but burn a bit quicker (this equals more ash below the burn shield. Not on the food) Premium brands charge more because they do use a liquid additive to enhance the smoke flavor. I don't use mine for "grilling " even though it will get to 485⁰. My simple normally includes a sandwich or my main man, chef boyardee.. Never had shaved anything or almond flour on my sandwich ..it does look good though!!
