Here's the thing...I have enough basil in my backyard garden to feed the Italian armed forces. So tonight...it's pesto pasta... I was light on the oil and parmesan and found a nice texture that didn't overwhelm my palette. Cheeseburgers were topped with huitlacoche ("corn smut") sauteed with garlic and an excellent corn salsa. Everything but the meat and cheese came from the garden this week. Huitlacoche is the result of a fungus that infects the corn kernels. The kernels swell up huge and turn gray/black. Mushroom consistency when sauteed and very earthy in flavor.
