So why persimmon wood in the first place? Is it just known to be really hard and light? Why not oak heads?

Oak is hard enough, but it is a very ring porous wood. Because of that, it has a lot of pith (soft, spongy cells) surrounded by the harder wood. Oak is also prone to rotting when out doors because it is so ring porous.
