You start with a low temp, the lowest my oven would go reliably was about 225. You could it until about 10 to 15 degrees below your desired internal temp (internal temp for med-rare is 130, so pull out by around 115). Take it out and put foil over and let rest for 20 min. After that, remove foil and either broil for a few min in the oven to get a nice sear or use a pan or grill to get the sear. It's the only way I'll cook individual steaks any more. It also works well for tri-tip, Ribeye, Picanha, and other steak style roasts. You can set your desired temp and the meat will never go above the temp and then you can reverse sear or flash sear to finish. It's great because you can just leave them in for a few hours if needed and they'll never overcook. I'll have the Mrs throw them in a few hours before I come home from work and they're ready to sear up as soon as I get home. Also because they're cooking in a sealed bag, there's no air to dehydrate the meat and cook out the juices. I've done sous vide but i prefer the low temp oven first and then finish on the grill/pan/broiler. My issue with sous vide is that the cooked meat has a slightly different texture even after searing. Then you get to start all over again. I give up. Can't get any answers from anyone. No information other than the site is "having problems"... no s***! WTH are we supposed to do!? The (near ready to be signed) stimulus package has $600/week for 24 weeks federal unemployment benefits in addition to what Ohio offers if they get it together. See how you like it compared to the sous vide. Low/Slow is pretty much the only setting that my smoker has. I use a Smokehouse Big Chief. It's as basic as they come but gets it right every time. It maxes out at 165/170 and my grill gets up to around 1000. I punched in my PIN and got right on. It said I wasn't eligible for any new claims. I went to the current claims section and all my info was there from the last time I filled it out. After being shut out at the last of signing in, I would have thought everything was gone. It says I get the max payout.
