Dinner tonight!

Yeah, they love it which is awesome.  They've been getting more and more into it over the last 1-2 years and this summer they each did a week-long cooking camp that they loved and both came home wanting to make the things they learned at camp.  Son likes cooking, especially grilling or smoking, whereas my daughter prefers baking, so generally we let him take the lead on entrees and she handles desserts. That said, the first thing he made from his camp cookbook was a chocolate lava cake with homemade whipped cream.

Congrats I on your first comp! They are both a labor and a love.

I stopped doing them here a number of years ago. I was the prep and presentation guy. My friend was the smoke and temp guy. We entered quite a few tri state comps, and placed top 5 in a few too. Best finish was #2. 

For judging , Flavor is a subjective thing, but the textures were a constant.

Cooked some chipotle lime chilaquiles for dinner tonight. Had a zucchini from the garden to use up and wanted to do something different than what we've had with the other zucchinis we grew.

Tonight's fare...

Oven roasted bottom round roast, bedded with Vidalia onions and sweet peppers. Accompanied by sliced, roasted, red bliss potatoes , lightly seasoned with a sea salt amd a roasted garlic aioli.

Leftovers will make nice roast beef sammiches!

Smoked a brisket, 2 racks of ribs and a cream cheese. Forgot photos of the proteins but did get one of the cheese.

Wife decided it was time to begin themed dinners, so last night was pork chops with a bacon-apple-sage sauce, mashed sweet potatoes with brown butter and crispy sage, sautéed asparagus, with apple Mexican chocolate cakes for dessert. She can't just cook normal meals.

Quick cook during a hailstorm with thunder and lightning.  Garlic/cheese sausage, porterhouse, country style bone-in pork ribs.  First time doing the country style pork ribs.  I really liked them, no one else did…no plating pictures…I was busy trying to get everyone to try the ribs to no avail.

Dinner last night was seared scallops over creamy corn with a tomato & pickled onion salsa. I loved the different flavors and textures of the dish, but the missus felt it was a little weird.

A BLTA is my favorite sandwich to make on my own.  It may sound gross to some, but I like to add a little tin fish to it.
