I liked the pizza peppers so much, I made a Mexican version of it. I’m not doing the Keto Diet anymore, but when I made these Pizza Peppers the first time, I wondered why I ever ate pizza with crust because this was better. We do a lot of stuffed peppers with our favorites being cheesesteak stuffed green peppers and Buffalo chicken stuffed red peppers with smoked gouda cheese. Looks like I really need to stick with keto for good this time.
