Grad party tomorrow,  brisket prep tonight. 15lb Full packer + a 6lb point ( trimmed weight) will prep the ribs at 11am tomorrow.  Due to several guests with gluten, corn, and soy allergies, all rubs will be natural ingredients,  and hand mixed.

Smoked baked beans from scratch too. (Soaking overnight)

Took a crack at cooking General Tso Chicken for the first time the other night. Didn't go quite to plan. Certainly was not "crispy" but still had decent flavor. Might be something worth coming back to later.

So here is the rundown from yesterday.  Up since 0400. 20lbs total brisket, 115 ribs, 24 jumbo beef dogs, all sides were from scratch: 12 hour bbq beans, macaroni salad, coleslaw, sausage cream cheese jalapeños, roasted onion potatoes. 34 people, and almost no leftovers.

These are both Zgrill pellet grill smokers. Do you have sams club? Mernard's? Costco? Etc?  Can usually find great sales on them a few times a year.  I started with a 30" offset many years ago and have tried many different types and brands of smokers since.  It all depends on what kind of dedication and time you want to invest in the cooking side of things.  Each style has its pros and cons.  Start small

Yeah we have Costco and Sam's. I've been using a Weber Summit Kettle for the past 3 years. I like it and I've "figured it out" but the only issue is that you can't add more fuel without taking everything off which is super annoying for long smokes. I'm kind of put off by pellets just because I don't know what's in them. I buy my charcoal and wood chunks from a local producer.

If you're determined to use charcoal and chunks, check Home Depot or Lowes for an Oklahoma Joe offset.

Wife boss prepared an awesome traditional pot roast dinner last night for my birthday.  I Forgot I snapped a pic of it.

She makes a delicious garlic and onion gravy from scratch before putting it in the oven.

Spent most of the day cleaning yesterday, so I went with a pretty hand-off dinner. Smoked tri-tip, teriyaki mushroom gravy, rice, and steamed vegetables. Only thing I had to watch was the mushrooms for about 30 minutes to make the sauce. Everything else just kind of did its thing while I was busy. Didn't get any pictures of a full plate because no one would give me the 15 seconds to take a picture.

I've been pellet grilling for a number of years now, and can say that they are 100% safe.  Different brands all use the same 3 manufacturing plants. I like the sams club brand, never tried Costco brand. Rural kings are cheap, but burn a bit quicker (this equals more ash below the burn shield. Not on the food)

Premium brands charge more because they do use a liquid additive to enhance the smoke flavor.

I don't use mine for "grilling " even though it will get to 485⁰. Very rarely do I use it over 325⁰.

Think we have different definitions of simple.. My simple normally includes a sandwich or my main man, chef boyardee.. Never had shaved anything or almond flour on my sandwich 😂..it does look good though!!
