Home alone and had a single duck breast so I thought I’d cook myself something nice.

 

Reverse seared the duck, probably took it a little further than I prefer. Served with duck fat potatoes, buttered beetroot, shitaake mushrooms and sugar snap peas. Sauce is a duck jus made from reduced homemade duck stock with a splash of orange juice and a touch of hoisin sauce.

I don’t know if this is the right spot to post this or not but we qualified for the Jack Daniel’s BBQ World Championship Invitational today! It’s a pretty hard contest to qualify for since you have to win a contest and then go through a lottery. Might throw the sticks in and see if there is a course I can get onto in the Nashville/Lynchburg area.

So my wife was planning on making white chicken chili tonight. She's been stressed lately due to her upcoming surgery, the anniversary of losing her mom, and there's other stuff going on.

We're in the kitchen and she's draining the beans to put in the Insta Pot and goes to throw the lid in the garbage. Well, she dumps the beans in the trash meaning the recipe is a no go and nearly breaks down. I look at her and start laughing explaining to her that I've done things like that in the past and it's ok. We all make mistakes and sometimes we just have to laugh at the crazy things we do. I tell her to just go pick up food and that way she doesn't have to cook tonight.

She just got home from picking up food and the doctor's office called her back after she's tried to get information from on the surgery and what she needs to do beforehand. When they called back last month, they said we were scheduling surgery. Well, she finally got to talk to them and our appointment for Monday is for a consultation. There was a complete miscommunication on their end.

Family in town so I smoked some baby backs

Pulled them off the smoker to wrap above. Below is after wrapping and saucing, then a final product for dinner tonight with some homemade slaw, baked beans, and potato mac salad

Snagged a top round today, was inexpensive and figured I could marinade it all day.

Cooked it on the Blackstone and the. Just left it in a pan on low on the side. Came out awesome. Paired it with white rice and veggies.

Working a 38 hour shift at work and thought it would be a great night for some sauce and sketts.  I haven’t made homemade sauce in forever and one of the guys asked instead of jarred can we do homemade…I am glad he spoke up…

Been a minute since I posted a pic in here. 

Finished this brisket today. Split it before smoking. This is the point smoked to traditional perfection. OMG!!! So damn good. 

The flat I smoked for 6 hrs and then finished in the pressure cooker for shredded beef. 

Trying a month of carnivore eating. So far I'm down 12 lbs in 2 weeks and feeling great! AND I get to eat stuff like this!

I'm pretty sure that good smoked baby backs are among my top 5 favorite things ever. Those look killer!

Sunday another batch of Crab Legs.

A coworker gave me some hot peppers, so I turned 2 of them into a spicy tomato sauce served over linguine with abruzzese meatballs.

Neighbor's dad is in the hospital and not doing well. Talked to his wife the other night and they've been sleeping over in the room with him trying to spend as much time as possible. Figured they haven't had much time to cook and these garlic chicken legs were on sale at Costco so I picked some up to make for us, and give some to them. Giving them some salmon that I'm going to grill after, I'll post a pic when I finish.

 

 

Salmon done with some all purpose seasoning and finished with a little pat of butter when I took it off the grill. It's a banger and so friggin easy to make. Oil the skin side, season, cook indirect until 145 internal. Pull off the grill and lay a pat of butter to melt while it gets to eating temp.

We did breakfast for dinner tonight. We had biscuits, gravy, sausage, and hash browns. You'll notice there is a notable absence in that list: bacon. Freaking Wal-Mart didn't give us our bacon when we got grocery pickup. I'm going to have to go there tomorrow and rectify that mistake.

At least what we had was tasty and we're doing it again tomorrow night.

Having lived in the south for the past 18 years I still have not acquired the taste for Biscuits and Gravy.  The rest of the family like it though.
