You'd never know it looking at me, but I'm a "foody".  Some of the stuff you guys are posting on here looks killer good. I'm very efficient in the kitchen but pretty average in the cooking department with a fairly small repertorie of menu items.  I do those to help give my wife a break and also serve as the "door dash" guy... as in Papa Murphy's pizza, takeout Chinese, etc. 😆.

I really wish the rest of my family like prime rib as much as I do. I can’t justify paying for one knowing maybe a third of it gets eaten.

There's nothing better than making something yourself that is equal to or better than takeout.

I did some lamb tikka skewers yesterday and absolutely nailed them. Definitely better than my local indian

Are you using a tandoori or over coals? That looks great. We will host a curry party a couple times a year with friends .

It was ridiculously easy. Blend together 2 cups yoghurt, 1 green chilli, thumb of Ginger, 3 garlic cloves, 1 tsp salt, 1 tsp red kashmiri chilli powder, 1 tsp cumin, 1.5 tsp garam masala, 2 teaspoons white vinegar, 2 tbsp olive oil, and 1 tsp red food colouring.

Marinate your meat for 24 hours then you're good to go.

Cooked over some coals on my smoker. Just got the coals as hot as I could and cooked them until then had a nice colour.

Smoked deer loaf (meatloaf) buddy took down a nice buck, and gifted me some fresh Ground beef

Added a lb of ground Italian sausage and some this and that, threw it on the smoker.

A lot of fine ideas. questions are how many are you feeding? Are you considered a busy station? When I cooked at the station there were 18 and sometimes more if another Battalion Chief or celebrating an  retirement. You have to keep it simple. My go to meal was baked chicken quarters with lemon & thyme placed under the skin. Roast baby potatoes with onions. A small salad and of course a desert. (It was customary that if one was on overtime they provided desert) I would consider a subscription to cooks illustrated. They have great recipes and you can get it online.

Moose meat to me is the same as bear meat. Slightly tough and greasy if prepared wrong. Up north we used to get in the lottery on moose tags for hunting. Usually you just waited until someone took one out with a vehicle though ! Dang swamp donkeys!  Welcome to the forums!

Usually 5 for family meals, up to 15 for gatherings,  and 40+ for PD events. The PD is a squad effort. Usually smoked leg quarters or pork butts, burgers, etc. Everyone provides something.

Everyone brings a different Indian/thai  dish, someone will make naans, others may bring samosas, etc. Anywhere from 8 to 15 people. Most of its cooked here.

I was pretty lazy over the holiday and didn't post any meals and Monday I get back to a strict diet. So packing all the last minute carbs in this weekend with this dessert of my own creation. I made a vanilla pastry cream in a deep dish pie crust and topped it with a stabilized white chocolate whip cream and drizzled 80% Ghirardelli chocolate over the top. Mrs H said about the pie, and I quote: "This does not suck!"

My plan was to make it through Dry January, but this steak had other ideas! Seared on the grill, finished in the oven and topped with a Rosemary compound butter. Sorry, ate all of it before realizing I didn't get a picture of the finished product.
